Its harvest time in most parts of the northern hemisphere, and
up here in Alaska that also means loads of garden squash,
Zucchini mostly.
The
other great taste treat in
abundance is blueberries. They
are everywhere, all you have to
do is go out and pick them...
Here are a couple great recipes for both the zukes and the
blueberries. Enjoy.....
**** Zucchini muffins
Carol used a recipe from the "Enchanted Broccoli Forrest" for these great muffins.
1/2 cup honey
6 tbs melted butter
2 lg eggs
1/2 tsp vanilla extract
2 cups grated zucchini, packed
1 cup unbleached flour
1 cup whole wheat flour
1/2 tsp salt
2 1/2 tsp baking powder
1/4 tsp nutmeg
1/2 allspice
1/2 tsp cinnamon
1/4 tsp ginger
1) Place zucchini in a colander over a bowl or sink. let stand 10 - 20 minutes, then squeeze out all the excess moisture.
2) With an electric mixer at high speed, beat the honey for about 5 minutes, or until white and opaque. Beat in the butter, eggs, and vanilla. Beat several minutes more.
3) Sift together the dry ingredients.
4) Add the sifted dry ingredients, alternately with the zucchini, to the honey mixture, beginning and ending with the dry ( flour / zuke / flour / zuke / flour ). Mix just enough to blend after each addition.
5) Spread into a buttered muffin tin, Bake 35 to 45 minutes.
****Zucchini Jelly
Cindy's jelly recipe is great.
6 cups grated zucchini ( no peel )
6 cups sugar
1/2 cup water
1/2 cup crushed pineapple
6 oz any flavor Jello, strawberry and peach Jello are great.
1/2 cup lemon juice
**Boil squash and water 10 min.
**Add sugar, lemon juice and pineapple, boil 10 min.
**Take off heat and add Jello, stir till devolved.
**Pour into ready jars, makes approx 5 pints.
****Blueberry Jam
This is Carol's world famous blueberry jam. She uses the recipe from "Slim Set" fruit pectin by Kraft.
6 cups blueberries
2 tbsp lemon juice
1 pkg "Slim Set"
3 cups sugar
makes about 8- 8 oz. jars
1) Measure prepared fruit and lemon juice into 8 qt saucepan. Measure sugar into separate bowl. Set aside. Add 1 pkg "Slim Set" Fruit Pectin to fruit, mixing thoroughly.
2) Place fruit mixture over high heat. Bring to FULL ROLLING BOIL, stirring constantly to prevent scorching.
3) Stir in sugar, mixing well. bring to FULL ROLLING BOIL, stirring constantly. Continue to boil EXACTLY ONE MINUTE.
4) Remove from heat, skim off any foam.
5) Fill jars QUICKLY to 1/8 inch of tops. Wipe off jar rims. Cover quickly with flat lids. Screw lids tightly. Invert jars 5 minutes, then turn upright. After 1 hour, check seals.
****To prepare jars, boil jars on rack in saucepan filled with water for 10 minutes. Place new, flat lids in saucepan with water. Bring to boil, remove from heat. Let stand in water till ready to use. Drain well.
